Single Serve Sweet Potato Supreme

-1 sweet potato
-2 eggs, cooked over-easy
-½ an avocado, sliced
-¼ cup onion, diced
-1 roma tomato, diced
-½ cup broccoli, chopped
-½ cup spinach
-Olive oil
-salt, pepper, chili powder, and garlic powder to taste
Poke all sides of sweet potato with a fork, to create holes. Wrap in a damp paper towel and place on a plate. Microwave 5 minutes. Flip over and microwave an additional 5-7 minutes, until cooked through. Heat oil in a pan and add vegetables and seasonings. Saute until soft. To serve, cut potato in half, and layer with the cooked eggs, veggie mix, and avocado. Enjoy!
