Single Serve Sweet Potato Supreme

Sometimes life gets busy, and nutrition ends up at the rear of your priority list. You try your best but sometimes making the right nutrition choices seems too time consuming! Finding some go-to recipes like this Single Serve Sweet Potato Supreme that take less than 15 minutes to prepare will allow you to fuel your body with so many of the essential nutrients it needs on a regular basis. The best part is that you can tweak the recipe to your liking with any of your favorite veggies and toppings you have on hand!
-1 sweet potato
-2 eggs, cooked over-easy
-½ an avocado, sliced
-¼ cup onion, diced
-1 roma tomato, diced
-½ cup broccoli, chopped
-½ cup spinach
-Olive oil
-salt, pepper, chili powder, and garlic powder to taste
Poke all sides of sweet potato with a fork, to create holes. Wrap in a damp paper towel and place on a plate. Microwave 5 minutes. Flip over and microwave an additional 5-7 minutes, until cooked through. Heat oil in a pan and add vegetables and seasonings. Saute until soft. To serve, cut potato in half, and layer with the cooked eggs, veggie mix, and avocado. Enjoy!
